The premium wine appellation of the Corse du Sud department, centred on the capital of Corsica and the western slopes of its central mountain range. Ajaccio is defined by its monopoly on the Sciaccarellu (Mammolo in mainland Italy) red grape variety — a light, fragrant, spicy variety unique to Corsica that produces wines of extraordinary elegance and aromatic complexity from the granite and quartz soils of the island's western coast. White wines from Vermentino and Ugni Blanc round out the appellation. The wines carry the wild garrigue character of Corsica — maquis herbs, granite mineral, and the sea.
