Nada

Nada (Nada-Gogo, the five districts of Nada) is historically Japan's most prolific sake-producing region, responsible at peak for over 30% of all Japanese sake output. The Miyamizu water — discovered in 1840 by Tazaemon Yamamoto — is the defining element: its mineral richness produces the full-bodied, assertive otokozake (man's sake) in direct contrast to the light-dry tanrei of Niigata. Home to the headquarters of Hakutsuru, Kiku-Masamune, Ozeki, and Sawanotsuru.
