Japan — sake

Fushimi

Fushimi is Japan's second-great sake city after Nada, producing the onnazake (woman's sake) — soft, fragrant, and elegant — in direct stylistic contrast to Nada's assertive Miyamizu-driven style. The Fushimi water is among the softest in Japan, producing sake of great finesse. Over 30 breweries remain active in the district, many in traditional machiya (townhouse) kura that have operated for centuries. The Fushimi Inari-Taisha shrine, dedicated to Uka no Mitama (a rice deity), stands adjacent.
