Getariako Txakolina

The most famous of the three Txakoli appellations in the Basque Country — from the coastal hills around the medieval fishing village of Getaria, producing bone-dry, lightly sparkling white wine from the indigenous Hondarrabi Zuri grape. Txakoli is the definitive aperitif of San Sebastián's pintxos culture: low alcohol (10-11%), high acid, saline-mineral, and best poured from height to aerate its natural carbonic freshness.
