Historic Sicilian fortified wine from the western tip of Sicily around the city of Marsala. Made from Grillo, Catarratto, and Inzolia grapes via a solera-like perpetuum system with cooked grape must (mosto cotto). Styles range from Fine (dry) to Vergine (bone dry, aged 5+ years) and Superiore. Used in classic Italian cookery but serious dry Vergine styles rival fine sherry.
