Quezon Province — Lambanog

Quezon Province on Luzon is the heartland of lambanog production — coconut vodka distilled from fermented coconut sap (tubâ). The mangangarit (coconut tapper) climbs the palm twice daily to collect fresh sap, which begins fermenting immediately upon collection. The mananguete (distiller) then double-distils the fermented tubâ in copper pot stills. Traditional lambanog is clear, slightly sweet, with a distinctive coconut character. Infused versions (pandan, fruits, flowers) have expanded the category.
