Tokaj, in northeastern Hungary, produces what Louis XIV called 'the wine of kings and the king of wines' — the legendary Tokaji Aszú, made from botrytis-affected (nobly rotten) Furmint and Hárslevelű grapes. The unique volcanic tufa and clay loam soils, combined with the Bodrog and Tisza rivers' autumn morning mists, create perfect conditions for Botrytis cinerea. Dry Furmint is now also increasingly recognised as a world-class white variety of tremendous ageing potential.
