Amarone della Valpolicella is one of Italy's most distinctive and powerful wines, produced by drying Corvina, Corvinone, and Rondinella grapes for 90–120 days before pressing. The appassimento (drying) process concentrates sugars, flavours, and colour, producing wines of extraordinary richness, complexity, and ageing potential — 15%+ alcohol, intense dark fruit, bitter chocolate, leather, and tobacco. The Valpolicella Classica zone's limestone and clay hillside vineyards produce the finest expressions.
