Harrar
Harrar (also spelled Harar) is Eastern Ethiopia's ancient walled city and the oldest continuously-traded Ethiopian coffee export. All Harrar coffee is naturally processed — dried in whole cherry form on elevated drying beds or ground surfaces in the dry highland climate. The result is among the most complex and polarising coffees in the world: intense blueberry and mocha character, a distinctive gamey/winey quality from the natural fermentation, and a full, almost syrupy body. The 'mocha' flavour descriptor that appears throughout coffee vocabulary derives from the port of Mocha (Yemen) through which Ethiopian and Yemeni coffee was historically exported.
