Robert Chevillon Nuits-Saint-Georges Premier Cru Les Vaucrains

Nuits-Saint-Georges AOC, France
The most powerful and tannic of Nuits-Saint-Georges Premier Crus — Vaucrains on marl-limestone soils produces Pinot Noir of dense, almost Pommard-like structure but with more aromatic complexity. Chevillon's old vines amplify this: dark cherry, plum, iron, volcanic mineral, and firm, fine-grained tannins. Aged 18 months in old barriques. Requires 12 years; drinks magnificently for 30+.
complement
Vaucrains's tannic density and iron mineral depth requires the collagen-rich richness of braised short ribs; bone marrow adds luxury; gremolata's citrus lifts the wine's mineral core.

complement
The wine's earthy complexity and mineral depth aligns with wild mushroom's umami intensity; aged Comté adds crystalline sharpness; walnut resonates with the wine's own nutty-mineral character.
