Shannon Vineyards Sanctuary Peak Sauvignon Blanc Elgin WO

Elgin WO, South Africa
South Africa's finest Sauvignon Blanc — from Shannon's 400m elevation vineyards, the coolest in Elgin. The maritime-Atlantic influence and altitude produce Sauvignon Blanc of Loire-like mineral precision: white currant, grapefruit, flint, fresh-cut grass, and a persistent saline mineral backbone. Whole-cluster pressed; aged on lees 8 months. Exceptional at 2–6 years; develops honeyed complexity at 8+.
complement
The Cape's most prized white fish with South Africa's finest Sauvignon Blanc — the wine's mineral freshness and citrus precision bridges the kingklip's clean, firm flesh.

complement
Cool-climate Sauvignon Blanc and South African oysters is a coastal terroir pairing of natural harmony; the wine's saline mineral and citrus cuts through the oyster's brine and fat.
