Tissot (Puffeney Vineyards) Arbois Vin Jaune

Jura, France
Jura's most distinctive wine style — Vin Jaune from Savagnin grape aged under a yeast voile (flor) in never-topped barrels for a minimum 6 years 3 months. Bottled in the unique 62cl clavelin. Walnut, curry leaf, dry apricot, miso, and the extraordinary oxidative rancio of Jura's traditional wine. Unlike Sherry: it is aged still, not fortified. One of France's most gastronomically versatile wines — pairs with dishes that defeat Burgundy and Bordeaux (foie gras, mature Comté, curry, lobster bisque).
complement
The most classic Jura pairing — Poulet au Vin Jaune is literally made with Vin Jaune. The wine's walnut, curry, and oxidative rancio character permeates the cream sauce; the morels amplify the earthiness. A dish that cannot be made without the wine, and cannot be drunk without the dish.

Vin Jaune and aged Comté — the most famous Jura pairing and one of the world's great cheese and wine combinations. Both develop the same nutty, oxidative character over time (Comté in its cave-aged wheels, Vin Jaune under its voile). Walnut bread amplifies the walnut notes in both.
