Zidarich Terrano Carso DOC

Carso DOC, Italy
Terrano is the Carso's indigenous red variety — high in tartaric acid, polyphenols, and iron, the variety was historically prescribed as medicine. Zidarich's version from red rendzina soils shows maximum mineral intensity: dense ruby-purple with aromas of dark cherry, blackberry, iron ore, dried violet, and the distinctive rustic-earthy quality of karst soil. The palate is tannic and austere — a wine of fierce individuality that softens beautifully over 3–5 years.
complement
The osmiza tradition: Terrano's rustic tannin and acid cut through cured meat's fat and salt; the wine's dark mineral character elevates the humble preparation into a regional gastronomic experience

complement
Terrano's earthy, iron-mineral depth finds resonance with the mushroom's umami richness; the sage and brown butter soften the wine's austere edges
