Ippodo Gyokuro Sayamakaori is the most umami-intense tea legally sold in Japan — shade-grown for 21+ days, rolled like sencha (unlike matcha's tencha leaf), retaining the whole leaf's structural integrity while accumulating theanine to extraordinary levels. The name Sayamakaori refers to a cultivar originally developed in Saitama (Sayama district) but grown in Uji's superior conditions. This is the tea served at the finest Japanese kaiseki restaurants when the matcha course demands a liquid alternative: the deepest possible expression of shade-grown umami in leaf form.
