Kubota Hyakuju (One Hundred Longevities) occupies the middle position in the Kubota hierarchy — premium enough to anchor a special occasion but priced to allow regular service in fine dining contexts. At 40% seimaibuai (polishing remaining), it sits between the Senju's accessibility and the Manju's transcendence. Pure Yamada Nishiki rice, Niigata soft water, extended low-temperature fermentation. The classic Niigata profile with slightly more body and depth than Manju's extreme refinement.
