Kakurei Tokubetsu Junmai

Niigata, Japan
Kakurei (Crane Chill) is Niigata Meijo's ambassador to the restaurant world — a Tokubetsu Junmai (Special Pure Rice) that achieves the lightness of a ginjo without the ginjo price. The name references the Japanese crane (tsuru), a symbol of longevity and pure water — and the sake delivers exactly that: crystalline water character, clean rice, and the Niigata signature of karakuchi (dry) refinement. The preferred house sake among Tokyo fine dining accounts that understand the tanrei style.
