Umathum's flagship single-vineyard Blaufränkisch — the Hallebühl ('slope of the cock') in Frauenkirchen, Neusiedlersee-Hügelland, on iron-rich schist soils with Pannonian climate influence (hot summers, cold winters, very low rainfall). Biodynamic since 1997, the Hallebühl demonstrates what commitment to terroir and organic viticulture can achieve in Burgenland: deep colour, spiced dark fruit, and a mineral-graphite backbone that ages gracefully over 15+ years. Umathum was Austria's biodynamic pioneer — certified by Demeter before any other leading Burgenland estate.
