The finished chitlins should be tender enough to cut with a fork, slightly chewy, with a mild flavour that is pork-adjacent but distinctive. Where It Goes Wrong

Insufficient cleaning — the single most common reason people dislike chitlins. If the cleaning is done properly, the finished product is mild and pleasant. If not, no amount of cooking redeems them. Boiling aggressively — breaks the intestines apart instead of tenderising them. Low, gentle heat. Not cooking long enough — under-cooked chitlins are tough and chewy in the wrong way. They need the full 3-5 hours.

1) The cleaning is the technique. This cannot be overstated. Improperly cleaned chitlins taste and smell exactly like what they are. Properly cleaned chitlins are mild, inoffensive, and pleasantly porky. Turn each section inside out, scrub under running cold water, trim all visible fat and any remaining matter, and repeat until the water runs clear. This process takes 1-2 hours for a 5kg batch. 2) Simmer, never boil — 3-5 hours at a gentle simmer with aromatics. The long, slow cook breaks down the collagen in the intestine walls, producing tenderness and a broth that becomes gelatinous when cooled. 3) Vinegar in the cooking liquid — cider vinegar, added from the start, helps to further clean and tenderise. Additional vinegar at the table. 4) Ventilation — the smell during cooking is strong. Open windows, exhaust fan, or cook outdoors if possible. The smell dissipates completely by the time the chitlins are served.
