Description

Vouvray (AOC 1936) is the Loire Valley's most versatile wine and one of France's greatest expressions of a single grape — Chenin Blanc — grown on tuffeau limestone slopes east of Tours. Vouvray exists in four official styles, each with distinct culinary applications: sec (dry, under 4g/L residual sugar), demi-sec (off-dry, 4-25g/L), moelleux (sweet, 25-60g/L), and pétillant/mousseux (sparkling, méthode traditionnelle). The winemaker does not choose the style — the vintage dictates it. In warm years, grapes achieve the sugar concentration for moelleux; in cooler years, sec dominates. This submission to terroir and weather is Vouvray's philosophical core. In the kitchen: Vouvray sec is the cooking wine of Touraine — it deglazes the pan for the friuée (chicken fricassée), enriches the beurre blanc that accompanies sandre, and provides the liquid for poaching pears. Its high acidity (Chenin Blanc's signature) makes it an exceptional cooking wine: it concentrates during reduction without becoming cloying. Vouvray demi-sec is the pairing wine for the Loire goat cheeses — the touch of sweetness bridges the cheese's acidity, and both share the same limestone terroir. Vouvray moelleux, from botrytized or late-harvest grapes, is the Loire's answer to Sauternes: paired with foie gras, blue cheese, or tarte Tatin. The pétillant and mousseux are the apéritif wines of Tours — served in every café along the Place Plumereau. Great Vouvray ages extraordinarily: 50-100 years for moelleux. Huet, Foreau (Clos Naudin), and Champalou are benchmark producers. The tuffeau caves where Vouvray is aged also house the mushroom farms and the rillettes cellars — the same limestone that makes the wine stores the food.
