Australian brewing began with the First Fleet (1788), which brought malted barley and hops. James Squire established Australia's first brewery in 1798. The mid-20th century saw consolidation into the CUB and Lion duopoly. Little Creatures Brewing (2000) pioneered craft beer; the scene has grown exponentially since 2010.

Australia's craft beer scene has undergone one of the world's most dramatic transformations — from a duopoly of Carlton United Breweries (CUB) and Lion Nathan producing Foster's, VB, XXXX, and Toohey's, to one of the world's most vibrant and innovative craft beer cultures, with over 600 independent breweries producing everything from fruit sour ales using Australian native ingredients to world-class IPAs made with Southern Hemisphere hop varieties. The pivotal moment was the founding of Little Creatures Brewing in Fremantle, Western Australia, in 2000 — their Little Creatures Pale Ale, brewed with American hop varieties but distinctly Australian in philosophy, demonstrated that quality craft beer could succeed commercially in Australia. Since then, Feral Brewing (Western Australia), Mountain Goat (Melbourne), Stone & Wood (Byron Bay), Two Birds Brewing (Melbourne), and Endeavour Brewing Company have established the scene's quality credentials. Australian-developed hop varieties — Galaxy, Vic Secret, Enigma, Eclipse — have become internationally sought after for their intense tropical fruit, passionfruit, and peach character.
