Origin
Saison's origins are in the Hainaut province of Wallonia, where small farm breweries produced beer from their own grain in autumn and winter, storing it through spring for summer consumption. Brasserie Dupont in Tourpes (established 1844) is the oldest continuously operating Saison producer and the reference for the modern style. The style nearly disappeared in the mid-20th century before craft beer revived interest.
