The Japanese kissaten tradition anticipated this by pairing specific coffees with specific cakes and light foods decades earlier.

The framework mirrors wine pairing logic — light-bodied, high-acid origins (Ethiopian Yirgacheffe, Kenyan AA) paired with lighter, more delicate foods; full-bodied, chocolatey, low-acid origins (Brazilian Santos, Indonesian Sumatra) with heavier, richer dishes and desserts. Roast level functions like oak treatment in wine: light roasts amplify origin acidity and fruit (unoaked Chardonnay equivalent); dark roasts add toasted, bitter notes that complement char and fat (heavily oaked Chardonnay equivalent).
