Description

The physics of hand-pulled noodles (la mian): dough is stretched and doubled repeatedly — each stretch-and-fold doubles the strand count (1 pull = 2, 2 pulls = 4, 4 pulls = 16... 12 pulls = 4096 strands). The dough's gluten network must be strong enough to withstand repeated stretching without breaking. Different pull counts yield different thicknesses — Lanzhou ramen uses 6–8 pulls for standard noodles.
