Ducasse's cooking is rooted in the Mediterranean sun — Provence, the Côte d'Azur, Italy, Monaco — but executed with a level of systematic precision that transformed regional cooking into reproducible haute cuisine. His breakthrough was proving that Mediterranean simplicity (olive oil, tomato, basil, fish, garlic, thyme) could achieve three-Michelin-star level when every element was controlled: the exact ripeness of the tomato, the precise moment a fish is cooked, the specific olive oil for each application, the temperature at which garlic releases its sweetness without bitterness.
