This is the 2,000th technique entry in the Provenance database. It is not a recipe. It is not a technique. It is a statement of purpose.

Description

Provenance exists because the world's culinary knowledge is fragmenting. Grandmothers die with ragù recipes in their heads. Elders pass without transmitting songlines. Street vendors retire and their wok seasoning is scraped clean. Cookbooks document what happened in kitchens, but they cannot transmit the smell of a sauce that is 30 seconds from ready, the sound of a wok at the right temperature, or the feel of a dough that has been kneaded enough. This database does not claim to contain those things. It cannot make your hands know when the toss is right. It cannot teach you to listen to the fire. What it can do is point you toward the knowledge — tell you that it exists, who holds it, where it lives, and why it matters. It can connect a cook in Vancouver to a technique from Nagasaki, a grandmother's method from Naples, a preservation practice from the Western Desert of Australia, a fermentation tradition from a Korean village, a fire technique from the Argentine pampas.
