Description

Bubur ayam (chicken rice porridge) is Indonesia's most popular breakfast — a smooth, thick rice porridge topped with shredded poached chicken, fried shallots, celery leaf, cakwe (fried dough sticks — Chinese-Indonesian), kecap manis, sambal, and krupuk. The porridge is cooked by simmering rice in a large volume of chicken broth (8:1 liquid to rice ratio) until the grains break down completely into a smooth, thick paste.
