Description

Sous vide — cooking food sealed in vacuum bags in a precisely controlled water bath — eliminates the temperature gradient problem. In traditional cooking, the outside of a steak reaches 90°C+ while the centre hits 55°C (medium-rare). Sous vide holds the entire piece at exactly 55°C, edge to edge. The result is mathematically perfect doneness with zero guesswork. Combined with a finishing sear for Maillard browning, it produces results that are difficult to achieve any other way.
