Description

Fenugreek (methi) — seeds, fresh leaves, and dried leaves — introduces a specific bitter, slightly maple-adjacent flavour that is essential to South Indian sambhar powder, many North Indian preparations, and the distinctive flavour of certain butter-based sauces.
