Description

The tamarind chutney used for North Indian chaat (street food snacks) is a sweet-sour-spiced reduction that combines tamarind with jaggery, ginger, cumin, and chilli into a condiment of extraordinary complexity. It is served at room temperature alongside other chutneys (green coriander-mint chutney and yogurt) — the three chutneys together representing the three-flavour complement to fried snacks: sour-sweet, sharp-fresh-herb, and cooling dairy.
