Origin
The South Indian breakfast tradition — centred on the fermented rice and lentil preparations of idli, dosa, uttapam, and vada — is among the most nutritionally sophisticated meal systems in the world. The fermentation process improves the bioavailability of the grains' nutrients; the combination of rice and lentil provides complete protein; the accompaniments (sambar and coconut chutney) provide acid, fat, and additional micronutrients.
