The specific culinary traditions of Bali, Java, Sumatra, Sulawesi, Maluku, and Papua are as distinct from each other as the national cuisines of Europe — unified only by the shared spice base (candlenut, galangal, lemongrass, turmeric, chilli) and the presence of rice as the foundational starch.
