Description
The Batak people of North Sumatra — centred around Lake Toba (the world's largest volcanic lake) — have a cuisine built on three pillars: andaliman pepper (INDO-ANDALIMAN-01), pork (the Batak are predominantly Christian), and a reverence for the WHOLE ANIMAL. Batak cuisine uses every part — blood, intestine, skin, head — in preparations that are simultaneously celebratory and pragmatic.
