Description

Ayam pop is the anomaly in Padang cuisine — a PALE, gently poached chicken in a culture of aggressive colour, heat, and spice. Where every other Padang dish is golden, red, or dark, ayam pop is white. It is poached in a light broth of garlic, shallot, ginger, and lime juice, then briefly deep-fried to crisp the skin while keeping the flesh pale and moist.
