Description
Hazan's Italian bread — a straightforward yeasted white bread — demonstrates the opposite aesthetic from sourdough: not complex fermentation flavour, not open crumb, but a clean, white, slightly sweet crumb with a thin crust designed to accompany food rather than to be food in itself.
