Uni (雲丹, sea urchin gonads) is Japan's most prized sushi topping and one of the world's most polarizing ingredients. Japanese uni culture distinguishes between species, regions, and seasons with wine-level precision. Primary species: murasaki uni (紫雲丹, purple sea urchin, Anthocidaris crassispina) — common, yellow-gold, mild; bafun uni (馬糞雲丹, horse dung urchin, Hemicentrotus pulcherrimus) — small, orange, intensely sweet; kitamurashi uni (Strongylocentrotus nudus, Hokkaido) — large, pale yellow, clean flavor; ezo bafun uni (Hokkaido bafun variant) is the most prized. Hakodate, Hokkaido and Rishiri Island uni are Japan's premium sources.
