Description
Premium nori (海苔) production is a sophisticated aquaculture process. Porphyra yezoensis (the species used for nori) requires cold, nutrient-rich coastal water. The cultivation process: collect spores, grow on oyster shells in tanks, transfer to nets in the sea (autumn), harvest 45-60 days after planting. The Ariake Sea (Kyushu) and Tokyo Bay produce Japan's premier nori — Ariake has the specific tidal patterns and nutrient mixing that creates exceptionally flavorful nori. Grade hierarchy: 1-10 with grade 1 being rare and expensive; evaluated on color (deep green-black), fragrance (oceanic-sweet), texture (dissolves instantly in mouth), and flavor intensity.
