Thit kho tau — the Vietnamese caramelised pork belly and egg braise in coconut water — achieves a specific flavour through the combination of two techniques rarely joined in other traditions: the dry caramelisation of sugar (producing bitterness and depth) and the long braise in young coconut water (producing sweetness and a specific tropical lightness).
