The Method

Combine mashed bananas, melted butter, and sugar in large bowl; mix until sugar dissolves.

Stir in beaten egg and vanilla extract.

Whisk flour, baking soda, and salt in separate bowl; alternate folding flour mixture and buttermilk into wet ingredients, beginning and ending with flour.

Fold in walnuts; pour into parchment-lined loaf tin.

Bake at 175°C for 55–60 minutes until skewer inserted in centre emerges clean.

Cool in tin 10 minutes; invert onto wire rack and cool completely.
