Beef Jerky

Lean beef (top round, bottom round, eye of round, or flank — lean cuts that dry evenly) sliced thin (3-5mm) with the grain (for chewy jerky) or against the grain (for more tender jerky), marinated for 12-24 hours in a mixture of soy sauce, Worcestershire, sugar (brown or honey), black pepper, garlic, onion powder, and cayenne (or any seasoning profile — teriyaki, chile-lime, and black pepper are the popular commercial varieties), then dried. Drying methods: a food dehydrator at 65°C for 4-8 hours (the modern standard), a low oven (80°C, door cracked) for 4-6 hours, or traditional air-drying (in arid climates, on racks in sun and wind). The finished jerky should be dry, flexible (bendable without snapping — snapping indicates over-drying), and deeply flavoured.

The Method

Trim every trace of fat from the beef. Place the trimmed piece in the freezer for 30–45 minutes, until the surface is firm but the interior is not frozen solid. Slice across or with the grain — 3–5 mm thick, uniform throughout. Against-the-grain slices will be more tender; with-the-grain slices will be chewier and tear in long strips. Both are correct. The slices are ready when each is even in thickness from edge to edge.

Combine soy sauce, Worcestershire, brown sugar or honey, black pepper, garlic powder, onion powder, and cayenne in a non-reactive container. Add the beef slices, ensuring every surface is coated. Cover and refrigerate for 12–24 hours. The marinade must carry sufficient salt — drawn here from the soy sauce — to inhibit bacterial growth during drying. At the end of marination the slices will have darkened evenly and absorbed the liquid perceptibly.

Remove the slices from the marinade and pat each one dry with paper towels. Arrange in a single layer with no overlap on dehydrator racks or on a wire rack set over a baking sheet. No piece should touch another. The surface of each slice should appear matte and slightly tacky before drying begins.

Dry by one of three methods: in a food dehydrator at 65 °C for 4–8 hours (the modern standard); in a low oven set to 80 °C with the door cracked for 4–6 hours; or by traditional air-drying on racks in direct sun and moving air in an arid climate. This step is where the dish lives or dies — any residual moisture invites mould and renders the product unsafe for storage, while over-drying produces slices that snap rather than flex. Begin checking at the 4-hour mark.

Test each slice by bending it. Finished jerky flexes and shows a network of small surface cracks at the bend point; it does not snap, and it does not feel moist or yielding at the centre. If any piece snaps cleanly, it is over-dried. If any piece feels soft or damp, return the batch for a further 30–60 minutes and test again.

Reserve — Heritage-breed beef (grass-finished, dry-aged trim) from a named ranch; a craft marinade built on naturally brewed soy and single-origin spices; dried slowly in a calibrated dehydrator.

Estate — Whole top round or eye of round from a known butcher, hand-sliced to uniform thickness; a house marinade with quality Worcestershire and raw honey; dehydrator-dried at a controlled temperature.

Market — Supermarket top round or flank, partially frozen and carefully sliced at home; standard soy sauce and Worcestershire marinade; dried in a low oven with the door cracked.

House — Pre-sliced stir-fry beef or any available lean cut, trimmed of all fat; basic marinade from pantry staples; oven-dried — acceptable, provided all fat is removed and the meat dries fully.

Sensory Tests

◇Touch. Partially frozen beef firms under the fingertip and holds its shape cleanly under the knife without compressing.
◇Sight. After marination, slices are uniformly dark, with no pale or uncoated patches.
◇Sight. During drying, the surface progresses from glossy to matte to lightly wrinkled as moisture leaves.
◇Touch. Finished jerky bends through 90° and shows surface cracking at the fold without snapping; it is dry to the touch with no soft or damp centre.
◇Smell. Throughout drying, the aroma is savoury and deepening; any sour or off note indicates that the drying temperature was insufficient.
◇Where it lives or dies. The drying stage cannot be hurried or left unmonitored: insufficient drying invites mould and spoilage; excessive drying produces jerky that snaps rather than bends.
