Cannoli
Sicilian cannoli: fried pastry tubes filled with sweetened sheep's milk ricotta. The shell shatters. The filling gives. The two never become one — the shell is always filled at the last moment before serving, and if you hear it crack as you bite, it has been done correctly. Filled-in-advance cannoli are a tragedy.

The Method

Combine tipo 00 flour, caster sugar, and salt in a bowl; create a well and add white wine and 30ml oil, mixing to form a stiff dough.

Knead for 8 minutes until smooth and elastic; wrap in clingfilm and rest 30 minutes.

Roll dough to 2mm thickness on a floured surface; cut 8cm circles, wrap around metal cannoli tubes, seal edges with egg white, and chill.

Heat 5cm oil to 180°C; fry cannoli tubes 2–3 per batch until golden (1–2 minutes), drain on paper towels, cool completely, then slide tubes out.

Beat ricotta with icing sugar, vanilla, and cinnamon until smooth; fold in candied orange peel and chopped chocolate.

Transfer filling to a piping bag; pipe into both ends of each cannoli shell until full.

Dip both ends in chopped pistachios; top each with a glace cherry.

Refrigerate 30 minutes before service.

◇Where it lives or dies. The moment where cannoli lives or dies is the filling technique — use a piping bag to fill from both ends simultaneously, meeting in the middle. This ensures no air pockets (which would leave a section without ricotta). Dip both ends in chopped pistachios or candied orange peel immediately after filling. Serve within 10 minutes. The contrast of shattered shell and cool, sweet, slightly grainy ricotta filling is the dish — preserve it at all costs.
