Capretto al Cartoccio con Patate e Rosmarino Molisano

Suckling kid (capretto) — slaughtered at 3–4 weeks, before weaning — portioned into joints, marinated briefly in olive oil, white wine, crushed garlic, rosemary and black pepper, then assembled in individual packets of heavy aluminium foil or parchment with sliced waxy potatoes (also seasoned and oiled) and additional rosemary. Each packet is sealed tightly and placed directly on a wood-fire ember bed or in an extremely hot oven (220°C) for 35–40 minutes. The steam generated inside the cartoccio poaches the kid and potatoes in their own juices, the rosemary infuses throughout, and the sealed environment prevents the delicate milk-fed meat from drying. Opened at the table, the steam releases the aromatic concentration of the dish.

The Method

Combine the olive oil, white wine, crushed garlic, rosemary sprigs and black pepper in a wide dish, then add the capretto joints and turn them to coat well. Leave to marinate at room temperature for 30 to 60 minutes — no longer, as milk-fed kid is delicate enough that a prolonged acid-and-oil bath will begin to soften and dull the clean, milky flesh rather than merely perfume it. The marinade is done when the meat surface has taken on a faint sheen from the oil but the flesh remains firm and white.

Cut four large sheets of heavy aluminium foil, each generously sized to enclose a portion with room for steam to gather, so that the parcels can be sealed without stretching the foil thin at the folds. Season the sliced potatoes with salt, dress them with the additional olive oil and toss to coat so every surface is slicked and the potatoes will steam through evenly rather than catching dry on the foil. Arrange an even layer of potato slices at the centre of each sheet.

Lift the kid joints from the marinade, allowing the excess to drain briefly so the parcels do not flood with liquid and boil the meat instead of steaming it gently. Lay the joints over the potatoes, spoon some of the marinade over each portion, and tuck one fresh rosemary sprig alongside the meat. This is where the dish lives or dies: fold the foil up and over the contents, crimping every edge firmly and repeatedly until each packet is completely airtight — no gap, no loose fold — because any escape of steam will dry the delicate milk-fed meat and leave the potato slices leathery rather than tender.

Place the sealed packets directly on an ember bed, or set them on a baking tray in an oven preheated to 220 °C, and cook for 35 to 40 minutes without opening, so that the internal pressure can build and circulate the scented steam around both meat and potato throughout. The packets should be visibly puffed and taut by the end of cooking — a sign the sealed environment has held and the contents have cooked in their own aromatic cloud rather than simply roasting.

Bring the packets to the table sealed and open each cartoccio at the table, so the aromatic steam — rosemary, white wine and the milky sweetness of the kid — releases directly for the people eating rather than dispersing in the kitchen. The meat should be opaque throughout with no trace of pink at the bone; the potato slices fully tender when pressed with a fork.

Quality Hierarchy

Reserve — Milk-fed capretto sourced directly from a small Molisan or southern Italian farm, slaughtered at exactly 3–4 weeks, dressed to order. The meat is pure white, the fat paper-thin, the flavour irreducibly sweet. This animal cannot be substituted at this rung.

Estate — Certified milk-fed capretto from a reputable Italian or specialist domestic supplier, confirmed slaughter age under four weeks. Quality rosemary from the garden or a reliable herb grower; a clean, unoaked white wine used in both the marinade and the glass.

Market — Good-quality capretto from a butcher who can verify milk-fed status. Supermarket fresh rosemary is acceptable if the sprigs are aromatic. A standard dry white wine. Waxy potatoes from a reliable greengrocer — Charlotte, Ratte or similar.

House — Where milk-fed capretto is unavailable, very young milk-fed lamb (agnello da latte) is the closest structural substitute, with the understanding that the dish becomes a different preparation. All other elements as per Market. The cartoccio technique itself remains unchanged.

Sensory Tests

◇Touch. The sealed foil packet is visibly taut and puffed under internal steam pressure before opening — a loose or flat packet signals a seal failure during cooking.
◇Smell. On opening at the table, an immediate concentrated rush of rosemary, wine and milky meat aroma confirms correct steam retention throughout cooking.
◇Touch. Potato slices yield completely to light fork pressure with no resistance at the centre — the benchmark for overall doneness, since the potatoes take longer than the meat to cook through at this thickness.
◇Sight. The kid joints are opaque white throughout with no translucence at the bone; the surface is lightly coated in its own reduced, aromatic juices.
◇Where it lives or dies. The cartoccio must be sealed with absolute airtightness before cooking — any gap releases the steam that poaches, bastes and infuses the milk-fed meat, leaving it dry and unevenly cooked.
