Carne Salada del Garda Trentino con Rucola e Grana

The signature cured meat of Lake Garda's Trentino shore: lean beef (topside or silverside) salted with juniper, rosemary, garlic, pepper, and bay for 10–20 days, then sliced paper-thin and served raw as a crudo with rocket, shaved Grana Trentino, and a thread of olive oil. The brief cure is insufficient to cook the meat through — it is a raw cured preparation akin to bresaola but with a more aromatic herb profile and shorter ageing. The Lake Garda microclimate (the mildest in Trentino) is credited with its character.

The Method

Combine the coarse sea salt, crushed juniper, rosemary, garlic, bay, and black pepper. Lay the trimmed beef on a clean tray and massage the rub firmly into every surface, ensuring even coverage. Transfer to a non-reactive container, cover, and refrigerate. The meat is ready to enter the cure when the surface is uniformly coated and no bare flesh remains visible.

Cure in the refrigerator for a minimum of 10 days and a maximum of 20 days. Every 2–3 days, turn the piece, drain any accumulated liquid, and re-apply the aromatics. This is where the dish lives or dies: pull the meat at 10 days for a supple, herb-forward result; approach 20 days only if a firmer texture is desired. Beyond 20 days the herb character fades and the flesh toughens irreversibly. The surface should be deep burgundy-red and faintly tacky to the touch when curing is complete.

Remove the cured beef from its container. Wipe the entire surface clean of all salt and aromatics with a damp cloth — no residual salt should remain. The flesh should smell cleanly of juniper and rosemary with no ammonia or off-note.

Using a sharp carving knife or slicing machine, cut the beef across the grain into slices of approximately 1.5 mm — paper-thin and translucent when held to light. Lay the slices flat across chilled plates without overlapping. The slices must be supple and yield at the touch of a finger; any resistance signals they are too thick.

Dress the rocket with lemon juice, a pinch of lemon zest, and the olive oil. Arrange loosely over the plated beef. Finish with shaved Grana Trentino. Taste a small piece of meat with rocket and oil together — the salt, herb, and acid should be in balance with no single element dominant.

Reserve — Beef from a named Trentino breed (Rendena) with certified provenance, cured for exactly 12–14 days; Grana Trentino DOP aged 24 months, shaved to order; Trentino monocultivar extra-virgin olive oil, cold-pressed.

Estate — Topside from a known local butcher, trimmed with precision; Grana Trentino DOP of standard age; a good Gardesano or Lombard extra-virgin olive oil.

Market — Quality supermarket topside or silverside, carefully trimmed at home; any Grana Padano or young Parmigiano Reggiano in its place; a reliable Italian extra-virgin olive oil.

House — Standard silverside, a coarse sea-salt cure kept to the minimum 10 days, rocket from a bag, and Parmigiano Reggiano in place of Grana Trentino — the dish remains honest if the slicing and wiping are executed correctly.

Sensory Tests

◇Touch. After curing, the surface is deep burgundy-red and faintly tacky; the flesh yields gently under finger pressure without feeling spongy or wet.
◇Sight. Slices held to light are translucent; any opacity indicates the slice is too thick.
◇Smell. After wiping, the cured surface smells cleanly of juniper and rosemary with no ammonia or fermented off-note.
◇Sight. The plated slices lie flat and supple, deep red fading to rose at the edges, with no grey oxidised patches.
◇Where it lives or dies. The cure window of 10–20 days is absolute: over-curing beyond 20 days produces flesh that is too firm and robs the preparation of its aromatic herb character.
