Cassoulet

A long-baked casserole of white beans, duck confit, Toulouse sausage, and braised pork — the definitive preparation of southwestern France, the dish that reduces the argument between Castelnaudary, Carcassonne, and Toulouse to a question of emphasis rather than fundamentals. Cassoulet is a preparation of days: the beans soaked and cooked, the duck confited (Entry 80), the meats assembled in a terracotta cassole (or any deep, wide baking dish), and then baked at low heat, the crust broken and re-formed multiple times as it bakes. The crust is the signature element: breadcrumb, beans, and rendered fat coalescing into a caramelised cap that breaks and reforms across multiple baking cycles.

The Method

Soak haricots blancs overnight; drain and rinse thoroughly.

Blanch haricots in fresh water with bouquet garni and onion for 90 minutes until tender; reserve cooking liquid, discard aromatics.

Render pancetta in Dutch oven over medium heat until crisp; remove and set aside. Brown Toulouse sausage whole in rendered fat, remove and slice into 5cm pieces.

Layer cassole earthenware dish: half the beans with cooking liquid, then duck confit pieces, sausage, pancetta, remaining beans and liquid.

Combine breadcrumbs with 50ml duck fat and crushed garlic; distribute across surface.

Bake at 160°C for 120 minutes; press breadcrumb crust down every 30 minutes, add reserved cooking liquid as needed to keep beans submerged.

Increase to 200°C for final 30 minutes until golden crust forms; rest 10 minutes before serving.

◇Where it lives or dies. The moment where cassoulet lives or dies is the third day — cassoulet is better on day two and best on day three, gently reheated with a splash of bean cooking liquid or water. The flavours deepen, the fat redistributes, and the beans absorb the meats' rendered fats overnight. If it is served the same day it is assembled, it is a different (lesser) dish. Make it Thursday. Serve it Saturday.
