Cavatelli di Basilicata con 'Ndunderi di Ricotta

A mixed pasta preparation traditional at Lucano weddings and feasts — combining hand-rolled cavatelli (pressed with two fingers across a ridged board) with 'ndunderi di ricotta (large ricotta-and-semolina gnocchi descended from Roman garum-era recipes), served together in a simple tomato and basil sauce or braised lamb ragù. The combination of two handmade pasta formats in one dish is uniquely Lucano.

The Method

The night before: line a sieve with cheesecloth, add the ricotta, set over a bowl and refrigerate overnight. The ricotta must be dry enough that it holds its shape when pressed — wet ricotta will dissolve in the boiling water.

Make the cavatelli dough. Combine the semolina and lukewarm water on a board and knead until the dough is smooth, cohesive and no longer sticky — no egg is used. Rest, covered, for 30 minutes. The dough is ready when it springs back slowly under a thumb.

Make the 'ndunderi dough. Work the drained ricotta, semolina, eggs and grated caciocavallo together until the mixture is firm enough to hold a shaped oval without slumping. If it sags, work in a little more semolina. This is where the dish lives or dies: a dough that is too wet will dissolve in the pot; it must be quite firm before shaping begins.

Shape the 'ndunderi into golf-ball-sized ovals — intentionally large and rustic. Arrange on a semolina-dusted tray and place in the freezer until partially frozen and firm to the touch, at least 30 minutes. A frozen exterior holds the dumpling intact during boiling.

Roll the cavatelli. Divide the dough into small pieces and roll each into a rope roughly 1 cm in diameter. Cut into 2 cm lengths. Press two fingers down on each piece and drag firmly across a ridged board — the drag, not the press alone, creates the hollow centre and ridged surface. The finished cavatelli should show a clear channel and hold their curl; flat pieces indicate the drag was omitted.

Prepare the sauce. Warm the olive oil in a wide pan, add the passed tomatoes and cook over a moderate heat until the sauce has reduced and deepened in colour — no longer watery at the edges. Add the basil and remove from the heat.

Bring a large pot of generously salted water to a rolling boil. Add the partially frozen 'ndunderi. Cook for 5–6 minutes; they are done when they have floated to the surface and remained there for at least 1 minute, and yield gently to a spoon without resistance. Remove with a slotted spoon into the sauce.

Return the water to a full boil and add the cavatelli. Cook for 3–4 minutes — they are done when they rise to the surface and the cut edges have lost their raw, floury appearance. Remove directly into the pan with the sauce and 'ndunderi. Do not cook the two pastas together in the same water at the same time: they have different cooking times and the cavatelli will overcook while the 'ndunderi finish.

Turn the combined pastas gently in the sauce over a low heat for one minute so each piece is coated. Serve on a wooden board in the traditional Lucano manner — the contrast between the chewy cavatelli and the soft, milky 'ndunderi should be perceptible in every portion.

Reserve — Ricotta made that morning from raw sheep's milk, drained overnight; aged caciocavallo from a single Lucano producer; bronze-die semolina stone-milled from local durum wheat.

Estate — Good-quality whole-milk ricotta drained overnight; a reliable aged caciocavallo from Basilicata or Campania; fine semola rimacinata from a specialist mill.

Market — Supermarket whole-milk ricotta well drained; a widely available caciocavallo or pecorino romano; standard semola rimacinata.

House — The dish holds at this rung only if the ricotta is drained overnight without exception — no shortcut at this stage produces an acceptable 'ndunderi.

Sensory Tests

◇Touch. Drained ricotta holds its shape when pressed into a ball and does not weep liquid onto the board.
◇Touch. Cavatelli dough springs back slowly — not immediately — when pressed with a thumb after resting.
◇Touch. Partially frozen 'ndunderi feel firm and dry on the surface before entering the water.
◇Sight. 'Ndunderi have floated and held the surface for at least one full minute before they are lifted out.
◇Sight. Cavatelli cut edges are no longer floury-white but translucent and slightly swollen at the rim.
◇Sight. The tomato sauce has lost its wateriness at the edges of the pan and deepened to a true red before the pastas are added.
◇Where it lives or dies. The 'ndunderi dough must be firm enough before shaping to hold its oval form and survive boiling — a wet ricotta mixture dissolves in the pot and cannot be recovered.
