Chana Masala (Naturally Vegan)

Chana masala — spiced chickpeas in a tangy tomato-onion gravy — is one of North India's most beloved preparations and one of the clearest examples of a dish that is naturally vegan and completely satisfying. The preparation is defined by its spice complexity and its sourness: amchur (dried mango powder), tamarind, or pomegranate seeds contribute a distinctive acidic note that distinguishes chana masala from simpler chickpea curries. The black chickpea version (kala chana) is darker, nuttier, and earthier than white chickpeas, and makes a more complex preparation. The Method

Heat oil in a heavy-bottomed pot over medium; sauté onion 6–7 minutes until golden.

Add garlic, ginger, and serrano chillies; cook 2 minutes until fragrant.

Add chickpeas, coconut milk, crushed tomatoes, and vegetable stock; bring to a simmer.

Simmer uncovered 20–25 minutes until sauce thickens and flavours meld.
