Pig intestines cleaned meticulously (the cleaning is the technique — removing all residual matter, turning the intestines inside out, scrubbing under running water repeatedly until they are pale and odourless), then simmered for 3-5 hours with onion, garlic, bay leaf, cayenne, and vinegar until tender. The finished chitlins should be tender enough to cut with a fork, slightly chewy, with a mild flavour that is pork-adjacent but distinctive. They are served with hot sauce and vinegar, often alongside collard greens and cornbread.
