Christmas Bûche de Noël (Yule Log)

The bûche de Noël — the Christmas Yule Log — is one of France's great seasonal confections: a rolled sponge cake filled with buttercream or ganache, iced to resemble a log, and decorated with seasonal garnishes (meringue mushrooms, marzipan holly, powdered sugar 'snow'). The preparation requires two technical skills in sequence: making a genoise or biscuit roulé (a flexible sheet sponge that can be rolled without cracking) and making the filling and exterior icing (typically chocolate ganache or coffee buttercream). The rolling technique is specific — the sponge must be rolled while warm into a clean tea towel to 'train' its curl, then unrolled, filled, and re-rolled once cool. A sponge that cracks on rerolling is the most common failure, typically caused by over-baking or rolling when fully cold.

The Method

Whisk egg yolks and 80g sugar over 50°C water bath until pale and reaches 43°C; fold in milk and vanilla.

Sift flour, cocoa, baking powder, and salt; fold into yolk mixture in three additions.

Whip egg whites with 20g sugar to soft peaks; fold into batter in two additions.

Spread batter evenly (8mm thick) onto parchment-lined sheet tray; bake at 200°C for 12–14 minutes until springy.

Invert onto fresh parchment dusted with cocoa powder; cool 5 minutes.

Prepare ganache: pour warm cream over chopped chocolate; let rest 1 minute, then whisk until glossy; cool to 32°C.

Whip cold cream with powdered sugar to stiff peaks; fold in cooled ganache until ribboned.

Spread cream filling thinly over sponge; tightly roll from one short end; trim ends, dust with cocoa, and garnish with candied chestnuts and violets.
