The dough is a cooked paste of flour, water, salt, and oil — a choux-adjacent formula where the initial cooking of the flour in boiling water pre-gelatinises the starch, creating a smooth, pipeable batter that holds its shape through the frying process. Spanish churros are served dusted in fine sugar and accompanied by thick drinking chocolate — not hot cocoa but a genuinely viscous, almost ganache-like chocolate sauce thickened with cornstarch.
