Cjarsòns di Carnia con Burro e Ricotta Affumicata

Carnia's most complex filled pasta: half-moon pasta filled with a sweet-savoury mixture that varies by village but typically includes potato, spinach, sultanas, candied lemon peel, cinnamon, nutmeg, sometimes cocoa or apple — a medieval-rooted sweet-spice-savoury combination that survives in the Carnic Alps. Dressed simply with melted butter (browned to beurre noisette), fresh ricotta affumicata (smoked ricotta from Friuli) grated over, and cinnamon. The sweet filling with savoury-smoked cheese and butter creates a flavour register unique to Friuli.

The Method

Combine the flour and salt on a work surface. Add the warm water gradually, working the dough until smooth and cohesive. It will be firmer and slightly denser than an egg-based dough. Knead for 8–10 minutes. Wrap and rest at room temperature for 30 minutes. The dough is ready when it is supple and does not spring back when pressed.

Mix the mashed potato, chopped spinach, drained sultanas, candied lemon peel, cinnamon, and nutmeg in a bowl. Season with a pinch of salt. Mix cold. Taste: the filling should register as unusual-savoury — a perceptible sweetness and warmth from the spice, but emphatically not confectionery. Adjust spice if needed, but do not push the sweetness further.

Roll the rested dough to a thickness slightly greater than Emilian egg pasta — approximately 2–3 mm. Cut rounds of 7–8 cm diameter. Place a small amount of filling (no more than one level teaspoon) at the centre of each round. This is where the dish lives or dies: overfilling collapses the balance of the dish, and the rich sweet mixture must remain a restrained counterpoint, not the dominant mass. Fold each round into a half-moon, pressing the edges firmly to seal without air pockets.

Cook the cjarsòns in a large pan of generously salted boiling water in batches. They are done when they float and the dough at the sealed edge is just tender to the bite — 3–4 minutes from the surface.

While the pasta cooks, melt the butter in a wide, pale-coloured pan over a medium flame. Continue cooking, swirling frequently, until the milk solids turn golden and the kitchen smells of hazelnut. Remove from the heat immediately. The colour must be noisette — amber-gold, not brown-black; the scent is nutty, not bitter.

Lift the cjarsòns from the water with a slotted spoon and transfer directly into the beurre noisette. Turn gently to coat. Divide among warmed plates. Grate the ricotta affumicata generously over each portion — it should fall in fine, dry shards, not clumps. Finish with a light dusting of ground cinnamon. Serve at once: the smoke of the ricotta against the spiced sweet filling should be the first thing perceived on the palate.

Quality Hierarchy

Reserve — Ricotta affumicata sourced directly from a Carnic or Friulian producer; potatoes from the Carnic Alps; the filling supplemented with a trace of bitter chocolate or grated apple as a village variant recorded in Modotti.

Estate — Commercially imported Friulian ricotta affumicata (dry, firm, grateable); good floury potato; sultanas plumped in grappa rather than water.

Market — Any dry smoked ricotta available locally; standard floury potato (Maris Piper, Russet); sultanas soaked in water; good unsalted butter browned with care.

House — Unsmoked ricotta is not an acceptable substitute — the smoke is the critical flavour counterpoint; without it the dish is unresolved. If ricotta affumicata is unavailable, a small quantity of finely grated aged Pecorino may serve the salty-savoury function, though the smoke character is lost.

Sensory Tests

◇Touch. Pasta dough is supple and does not spring back when pressed after resting — it is ready to roll.
◇Taste. Filling tastes unusual-savoury: sweetness and warm spice are present but the mixture is not confectionery; the potato is the dominant mass.
◇Touch. Sealed edges of cjarsòns are firm with no air pockets; the half-moon holds its shape without splitting.
◇Touch. Cooked cjarsòns float to the surface and yield just-tender at the sealed edge when pressed — done.
◇Smell. Beurre noisette is ready when the kitchen smells of hazelnut and the solids are amber-gold; remove from heat at once.
◇Sight. Ricotta affumicata falls in fine dry shards over the pasta — if it clumps or smears, the cheese is too fresh or unsmoked.
◇Where it lives or dies. The quantity of filling placed in each cjarsòn must be small — a level teaspoon — because the sweet-spiced mixture is rich and the dish depends on restraint, not abundance, to remain savoury in register.
