Comeback Sauce

A thick, pale orange-pink sauce: mayonnaise as the base, chili sauce (or ketchup), Worcestershire sauce, lemon juice, garlic, onion, paprika, cayenne, yellow mustard, and black pepper. The flavour is tangy, mildly sweet, mildly spicy, and deeply savoury. It should taste like a sauce you can't stop eating — the balance of sweet, acid, and heat creates a craving loop.

The Method

Measure the mayonnaise into a bowl. It forms the body of the sauce and must be present in sufficient volume that no other element overtakes it; it should remain the dominant mass when everything is combined.

Add the chili sauce or ketchup, Worcestershire sauce, lemon juice, and yellow mustard. Whisk until the mixture is uniform in colour — a pale orange-pink with no streaks of white remaining.

Add the garlic, onion, paprika, cayenne, and black pepper. Whisk again to incorporate fully. Taste: this is the step on which the dish lives or dies. No single element should dominate — the sauce must read simultaneously as tangy, mildly sweet, mildly spicy, and deeply savoury. Adjust acid (lemon) if it reads flat; add no further ketchup if it reads sweet.

Transfer to a sealed jar and refrigerate for a minimum of 12 hours, preferably 24. The sauce is ready when the sharpness of the raw garlic and onion has softened and the elements have melded into a single, cohesive flavour.

Market — Standard commercial mayonnaise and ketchup; bottled lemon juice acceptable; pre-ground spices from a reliable source — yields a solid, serviceable sauce.

House — Any mayonnaise, any ketchup, pre-ground spices from the pantry — the sauce remains recognisable and usable, though the overnight rest becomes even more critical to round the edges.

Sensory Tests

◇Sight. The combined sauce is a uniform pale orange-pink, thick enough to coat a spoon without running immediately.
◇Smell. After resting, the raw sharpness of garlic and onion gives way to a rounded, savoury-sweet aroma with a faint paprika warmth.
◇Touch. The sauce clings to a finger and holds its body — it should not be watery or thin.
◇Where it lives or dies. The sauce cannot cross the line into sweetness — excess ketchup or insufficient acid collapses the balance that makes it compulsive.
